It should be obvious from the use by date, right? It should, but it’s not always the case. Eggs bought from a farm are not stamped. Similarly if they are laid by your own hen. Also, use by dates can become illegible or are sometimes plain wrong.
The simplest way to check if an egg is fresh or not is this. Place it in a pan of water. If it floats, throw it away. If it lies on the bottom, it’s as fresh as a daisy. Anywhere in between and the egg will start to life off the bottom. Here’s a great illustration to show you.
