I used to run a remote hotel. By remote I mean it was on an island in the middle of nowhere. It took two ferry journeys to get there from anywhere populated. So I got very adept at making my own bread. Everyday would start with a very early rise to get bread ready for that day’s customer and guests.

It’s over 10 years since I left that hotel, but I still make my own bread. I enjoy it and love the satisfaction (and smell) of freshly baked bread.

The bread I get the most pleasure from is made with a sourdough starter. It just makes the best quality bread. Light, fluffy and tastes delicious.
